Ingredients
- 2 tbsp olive oil
- 1/2 a medium white onion
- 2 small garlic cloves
- 2 serrano peppers
- 1 lb tomatoes
- 1 lb raw shrimp
- 1/2 cup cilantro
- salt and pepper to taste (optional)
Steps
- Heat the olive oil in a large skillet over medium heat and cook the onion, garlic, and serrano peppers for 5 minutes.
- Add the tomatoes, season with salt and pepper, and simmer for 10 minutes until softened.
- Mash the tomatoes in the skillet until they form a chunky sauce.
- Add the shrimp and cook for 5 to 7 minutes, turning once.
- Stir in the cilantro and cook until the shrimp are opaque and reach 145 F.
