- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 4 large eggs
- 1 cup canola oil
- 1/2 cup maple syrup
- 3 cups grated carrots
- 1 package (8 oz) cream cheese
- 1/4 cup butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- walnuts (optional)
Steps
- Heat the oven to 350 F and line or lightly oil a 12-cup muffin pan.
- Whisk the flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
- Whisk the eggs, canola oil, and maple syrup in another bowl, then stir in the carrots.
- Combine the wet and dry mixtures, divide the batter among the cups, and bake for 18 to 22 minutes until set.
- Beat the cream cheese, butter, maple syrup, and vanilla until smooth.
- Cool the cupcakes completely, then spread them with the frosting and add walnuts if using.
