Ingredients
- 12 slices bacon
- 2/3 cup butter
- 2/3 cup all-purpose flour
- 7 cups 2 % milk
- 1 cup sour cream
- 4 large baked potatoes
- 2 tbsp green onions
- 1 3/4 cups shredded cheddar cheese
- 1 tsp salt (optional)
- 1 tsp ground black pepper (optional)
Steps
- Cook the bacon in a large pot over medium heat for 8 to 10 minutes, then drain and crumble it.
- Melt the butter in a 6-quart pot over medium heat, whisk in the flour, and cook for 2 minutes.
- Gradually whisk in the milk, then simmer for 5 minutes until the broth thickens.
- Stir in the potatoes, salt, pepper, and half of the bacon, then heat for 5 minutes.
- Remove the pot from the heat and stir in the sour cream and cheddar until smooth.
- Top each bowl with the remaining bacon and green onions.
