Ingredients
- 4 lb russet potatoes
- 1 1/2 tbsp olive oil
- 3 tbsp apple cider vinegar
- 1 cup mayonnaise
- 3/4 cup sour cream
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper
- 12 oz bacon
- 6 green onions
- 1 1/2 cups medium cheddar cheese
Steps
- Heat the oven to 400 F.
- Rub the potatoes with olive oil and bake them on a sheet pan for 55 minutes, until tender.
- Bake the bacon on a separate sheet pan for 20 minutes, until crisp, then drain and crumble it.
- Cool the potatoes and bacon for 20 minutes, then cut the potatoes into bite-size pieces.
- Stir the mayonnaise, sour cream, vinegar, salt, and pepper in a large bowl, then fold in the potatoes, bacon, cheddar, and sliced green onions.
- Cover and chill the salad for 165 minutes before serving.
