Ingredients
- 3/4 cup plain greek yogurt
- 2 large eggs
- 1/3 cup pure maple syrup
- 2 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- zest of 2 large lemons
- 1 1/4 cups packed almond flour
- 1 1/4 cups oat flour
- 1 tsp baking soda
- 1/4 tsp fine sea salt
- 4 tsp poppy seeds
- 1/3 cup powdered sugar
- 1 tbsp fresh lemon juice
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with oil.
- Whisk the yogurt, eggs, maple syrup, olive oil, lemon juice, and lemon zest in a bowl.
- Stir the almond flour, oat flour, baking soda, salt, and poppy seeds together in another bowl.
- Fold the dry mixture into the wet mixture until just combined.
- Spread the batter in the pan and bake for 35 to 40 minutes, until a toothpick comes out clean.
- Stir the powdered sugar with the remaining lemon juice, then drizzle it over the cooled bread.
