Ingredients
- 1 cup vegetable stock
- 1 cup canned crushed fire roasted tomatoes
- 1 tbsp tomato paste
- 3 cloves garlic
- 1/2 tsp dried oregano
- 3/4 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/4 tsp crushed red pepper flakes
- 9 oz uncooked refrigerated tortellini
- 2/7 cup heavy cream
- 1/3 cup freshly grated parmesan cheese
- fresh topped basil for topping (optional)
Steps
- Add the stock, tomatoes, tomato paste, garlic, oregano, salt, pepper, and red pepper flakes to the Instant Pot.
- Stir in the refrigerated tortellini and seal the lid.
- Cook on high pressure for 1 minute, then release the pressure carefully for 2 minutes.
- Open the pot and stir in the cream and Parmesan.
- Let the tortellini stand for 2 minutes, then top with the optional basil.
