Ingredients

4 yukon gold potatoes
2 large leeks
2 tbsp unsalted butter
2 bay leaves
1 tsp dried thyme
1 cup heavy cream
4 cups unsalted chicken stock
3 cloves garlic
2 tbsp fish sauce
salt and black pepper to taste (optional)

Steps

Set a 6-quart Instant Pot to sauté and melt the butter for 2 minutes.
Add the sliced leeks and garlic, then cook for 5 minutes.
Add the potatoes, bay leaves, thyme, chicken stock, fish sauce, salt, and pepper.
Seal the pot and pressure-cook on high for 10 minutes, then release pressure naturally for 10 minutes.
Remove the bay leaves and blend the soup until smooth.
Stir in the cream and green onions, then warm on sauté for 3 minutes.
