Ingredients

  • 2 1/4 lb parsnips
  • 2 tbsp extra-virgin olive oil
  • 2 lb 90/10 ground beef
  • 1 yellow onion
  • 2 large carrots
  • 3 ribs celery
  • 4 cloves garlic
  • 3 1/2 cups chicken stock
  • 2 tbsp cornstarch or arrowroot powder
  • 1 can (28 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp worcestershire sauce (optional)
  • 3 tsp sea salt
  • 2 tsp garlic powder
  • 2 tsp freshly cracked black pepper
  • 4 cups thinly sliced green cabbage
  • minced fresh parsley (optional)
  • minced fresh chives (optional)

Steps

  1. Heat the oven to 400 F and peel and chop the parsnips into small pieces.
  2. Simmer the parsnips with 3 cups chicken stock and enough water to cover in a 6-quart Dutch oven for 20 minutes.
  3. Drain the parsnips, reserving 1/2 cup stock, then mash them with 1 tablespoon olive oil, 1 teaspoon salt, and 1 teaspoon pepper.
  4. Brown the beef with the onion, carrots, celery, and garlic in the Dutch oven for 10 minutes, until the beef reaches 160 F.
  5. Stir in the tomatoes, tomato paste, Worcestershire sauce, cabbage, remaining salt, garlic powder, and pepper.
  6. Mix the cornstarch with the reserved stock, stir it into the filling, and simmer for 8 minutes.
  7. Spread the parsnips over the filling and bake for 20 minutes, until bubbling and lightly browned.
