Ingredients
- 1 lb baby yukon gold potatoes
- 1/4 cup mayonnaise
- 1/4 cup dijon mustard
- 1 tbsp + 1 teaspoon salt
- 1/4 tsp freshly ground black pepper
- 3 cloves garlic
- 2 tsp chopped fresh thyme
- 1 tbsp chopped fresh italian parsley (optional)
Steps
- Boil the potatoes in salted water for 12 minutes, until nearly tender.
- Whisk the mayonnaise, Dijon mustard, garlic, one teaspoon salt, pepper, and thyme.
- Drain and halve the potatoes.
- Toss the potatoes with the mustard mixture.
- Heat an oiled grill to medium-high, about 425 F.
- Grill the potatoes for 8 to 10 minutes, turning often, until browned and tender.
- Sprinkle the potatoes with parsley.
