Ingredients
- 7 cups kale sliced leaves
- 2 tsp extra virgin olive oil
- salt and pepper
- 2 tbsp unsalted butter
- 3 1/2 large garlic cloves
- 1 1/2 cups uncooked white rice
- 2 1/4 cups chicken broth
- 1 1/2 tbsp butter
- 1/3 cup chopped almonds
Steps
- Heat the oil in a large skillet over medium heat and cook the kale for 5 minutes, until tender; season with salt and pepper.
- Melt 2 tablespoons butter in a 3-quart saucepan over medium heat and cook the garlic for 1 minute.
- Stir in the rice and chicken broth, bring it to a boil, then cover and simmer for 18 minutes.
- Melt the remaining butter in a small skillet and toast the almonds over medium heat for 3 to 4 minutes.
- Fluff the rice and stir in the kale and toasted almonds.
