Ingredients
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 4 large yellow onions
- salt and freshly ground black pepper (optional)
- 1/2 cup dry white wine
- 6 cups low-sodium beef broth
- 1 tsp dried thyme
- 1 bay leaf
- 1 baguette
- 1 cup grated gruyère cheese
Steps
- Melt butter with olive oil in a large pot over medium-low heat, then add sliced onions, salt, and pepper.
- Cook the onions for 35 minutes, stirring often, until deeply golden and soft.
- Add white wine and cook for 5 minutes until reduced.
- Add beef broth, thyme, and bay leaf, then simmer uncovered for 20 minutes.
- Toast baguette slices at 400 F for 5 minutes, top with Gruyère, and broil for 2 minutes until melted.
- Remove the bay leaf, ladle the soup into bowls, and top each bowl with cheesy baguette.
