- 1 large eggplant
- 1 tbsp extra virgin olive oil
- 1 cup homemade tomato sauce
- 11 slices fresh mozzarella
- fresh basil
- fresh oregano
Steps
- Heat the oven to 425 F and line a large baking sheet with parchment.
- Slice the eggplant into 11 rounds, brush both sides with olive oil, and arrange them on the baking sheet.
- Roast the eggplant for 12 minutes, turning once, until tender.
- Top each round with tomato sauce and mozzarella, then bake for 6 minutes until the cheese melts.
