- 1/3 cup melted vegan margarine
- 1 egg
- 1/3 cup almond milk
- 2 apples
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour
- 1/3 cup vegan margarine
- 1 1/2 tsp ground cinnamon
Steps
- Heat the oven to 375 F and line or lightly oil a 12-cup muffin pan.
- Whisk the white flour, whole wheat flour, 1/2 cup brown sugar, white sugar, salt, baking powder, cinnamon, and nutmeg.
- Whisk the melted margarine, egg, and almond milk in a separate bowl.
- Stir the wet mixture into the dry mixture, then fold in the apples.
- Mix the remaining brown sugar, all-purpose flour, margarine, and cinnamon into a crumbly topping.
- Fill the muffin cups, sprinkle on the topping, and bake for 18 to 20 minutes.
