- 2 1/2 lb roma tomatoes
- 1 1/4 lb grape tomatoes
- 8 cloves garlic
- 3 tbsp olive oil
- 1 pinch salt
- 1 pinch ground black pepper
- 1 large yellow onion (optional)
- 1 red bell pepper
- 1 potato
- 3 tbsp tomato paste
- 4 cups vegetable broth
- 2 cups fresh basil leaves
Steps
- Heat the oven to 425 F and place the tomatoes, garlic, onion, and bell pepper on a large baking sheet.
- Toss the vegetables with olive oil, salt, and pepper, then roast for 25 minutes.
- Add the roasted vegetables, potato, tomato paste, and broth to a large pot.
- Simmer the soup uncovered over medium heat for 25 minutes, until the potato is tender.
- Blend in the basil with an immersion blender until the soup is smooth.
