Ingredients
- 3 slices pancetta
- 9 oz linguini pasta
- 4 large egg yolks
- 1 cup pecorino romano cheese
- 1 tsp ground black pepper
- 1/2 cup pasta cooking water
Steps
- Boil the linguini in salted water until tender, then reserve one-half cup cooking water and drain the pasta.
- Cook the pancetta in a large skillet over medium heat for five minutes until crisp.
- Whisk the egg yolks, pecorino, pepper, and reserved pasta water in a bowl.
- Add the hot pasta to the skillet and remove it from the heat.
- Pour in the egg mixture and toss over low heat for two minutes, until thickened and the eggs reach 160 F.
