Ingredients
- 12 oz orecchiette
- kosher salt
- 4 tbsp unsalted butter
- 6 oz thickly-sliced ham
- 1 1/2 cups heavy cream
- 2 lemons (optional)
- 1 cup parmesan cheese (optional)
- 1 cup peas
- 2/7 cup chives (optional)
Steps
- Bring a large pot of salted water to a boil, cook the orecchiette until tender, and reserve 1 cup cooking water.
- Melt 2 tablespoons butter in a large skillet over medium heat, add the ham, and cook for 3 minutes.
- Add the cream, lemon zest and juice, and remaining butter, then simmer for 3 minutes.
- Stir the peas into the skillet and cook for 2 minutes.
- Drain the pasta, add it to the skillet with Parmesan, and toss with enough cooking water to make a smooth sauce.
- Stir in the chives, season with salt and pepper, and cook for 1 minute.
