Chocolate Mint Mini Pies

These mini graham crust pies combine chocolate pudding, whipped cream, and crushed mint cookies before chilling until firm.

Ingredients

  • 2 packages keebler® ready crust® mini graham cracker pie crust
  • 1 packages (3 2/5 oz) chocolate jell-o instant pudding and pie filling
  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp pure vanilla extract

Steps

  1. Crush 12 mint cookies and set the crumbs aside.
  2. Whisk the pudding mix with 1 cup cold water for 2 minutes, then let it thicken for 5 minutes.
  3. Beat the whipping cream, powdered sugar, and vanilla in a cold bowl until soft peaks form.
  4. Fold half the whipped cream and half the cookie crumbs into the pudding.
  5. Spoon the filling into the mini crusts and refrigerate for 45 minutes.
  6. Top the pies with the remaining whipped cream, crumbs, and whole mint cookies.
