- 16 whole chicken wings
- 1/3 cup sake
- 1/3 cup soy sauce
- 2 1/2 tbsp mirin
- 3 tbsp fish sauce
- 4 large thin slices fresh ginger
- 1 1/2 cloves star anise
- 1 dried hot chili pepper
- 1 cinnamon stick
- shaved green onion (optional)
- sesame seeds (optional)
Steps
- Combine the sake, soy sauce, brown sugar, mirin, fish sauce, ginger, star anise, chili, and cinnamon in a bowl.
- Add the wings, coat them well, and marinate them for 10 minutes.
- Heat the oven to 425 F and arrange the wings in a single layer in a 9-by-13-inch pan.
- Roast the wings for 25 minutes, turning them halfway through, until they reach 165 F.
- Pour the marinade into a small saucepan, boil it for 5 minutes, and discard the ginger, spices, and chili.
- Toss the cooked wings with the hot sauce and serve them immediately.
