Ingredients
- 2 thinly sliced chicken breasts
- 4 slices white panini bread
- 4 slices fresh mozzarella cheese
- 4 slices roma tomato
- 2 1/2 tbsp basil pesto sauce
- 4 tsp olive oil
- balsamic glaze for drizzling (optional)
Steps
- Heat a skillet or panini press to medium heat.
- Cook the chicken in 2 teaspoons oil for 3 to 5 minutes per side until it reaches 165 F, then slice it.
- Spread pesto on one side of each bread slice and layer on chicken, mozzarella, and tomato.
- Brush the outside of each sandwich with the remaining oil.
- Press the sandwiches for 3 to 5 minutes until golden and the mozzarella melts.
- Drizzle with balsamic glaze if using.
