Ingredients
- 3 cloves garlic
- 2 tbsp 1/3 less fat cream cheese
- 2 tbsp grated parmesan cheese
- 1/3 cup + 1/4 cup low sodium chicken broth
- 1/4 tsp kosher salt
- 1/8 tsp black pepper
- 6 oz chicken breast
- 1/3 cup uncooked pearl couscous
- 1 tbsp fresh basil
Steps
- Heat the oven to 400 F and place a large sheet of foil on a baking sheet.
- Mix the garlic, cream cheese, parmesan, 1/3 cup broth, salt, and pepper in a bowl.
- Place the couscous and remaining broth in the foil center, then set the chicken on top.
- Spoon the cream cheese mixture over the chicken and seal the foil packet tightly.
- Bake the packet for 25 to 28 minutes, until the chicken reaches 165 F and the couscous is tender.
- Open the packet carefully, stir in the basil, and rest it for 2 minutes before eating.
