Ingredients
- 1/2 cup rolled oats
- 1/2 ripe banana
- 1/3 cup chopped walnuts
- 1/4 cup dried tart cherries
- 2 tbsp raw pumpkin seeds
- 2 tbsp cacao nibs
- 1 tbsp sesame seeds
- 1/2 tbsp chia seeds
- 1 1/2 tbsp creamy almond butter
- 1 tbsp melted coconut oil
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1 pinch kosher salt
Steps
- Heat the oven to 350 F and grease a baking sheet with cooking oil.
- Mash the banana with the almond butter, coconut oil, maple syrup, vanilla, and salt.
- Stir in the oats, walnuts, cherries, pumpkin seeds, cacao nibs, sesame seeds, and chia seeds.
- Scoop six portions onto the baking sheet and flatten them into thick rounds.
- Bake for 12 to 15 minutes, until the cookies are set, then cool them for 5 minutes.
