Ingredients
- 6 oz sharp cheddar cheese
- 2 tbsp yellow cornmeal
- 1 cup red grape tomatoes
- 1 cup yellow grape tomatoes
- 2 tbsp sliced red onion
- 1/4 cup basil leaves
- 1 tbsp extra virgin olive oil
- 1/2 tbsp red wine vinegar
- salt and pepper to taste (optional)
Steps
- Halve the grape tomatoes and arrange them cut-side up on a platter or in nine small cups.
- Chop the cheddar into small pieces and divide it among the tomato halves.
- Top the tomatoes with the red onion and basil, then sprinkle on the cornmeal.
- Whisk the oil and red wine vinegar with salt and pepper, then drizzle the dressing over the tomato cups.
- Chill the salad cups for 15 minutes before serving.
