- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 2 eggs
- 1/3 cup unsweetened applesauce
- 1/4 cup oil
- 1 tsp vanilla extract
- 1 cup carrot
- 1 1/2 cups all-purpose flour
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 3/4 tsp kosher salt
- 2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 2 oz cream cheese
- 2 tbsp butter
- 1/4 tsp vanilla extract
- 3/4 cup powdered sugar
Steps
- Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with cooking oil.
- Whisk the sugars, eggs, applesauce, oil, and vanilla in a large bowl.
- Stir in the carrot, flour, baking soda, baking powder, salt, cinnamon, and allspice until just combined.
- Spread the batter in the pan and bake for 40 minutes, until a toothpick comes out clean.
- Cool the loaf in the pan for 5 minutes, then remove it and cool completely.
- Beat the cream cheese, butter, vanilla, and powdered sugar, then spread the topping over the cooled loaf.
