Ingredients
- 1 tbsp olive oil
- 1/2 yellow onion
- 1 clove garlic
- 8 oz potato
- 2 cup low sodium chicken stock
- 1 cup water
- 8 oz kale
- salt and pepper (optional)
- 1 few drops of white or cider vinegar on the bowls to serve
Steps
- Heat the olive oil in a 4-quart pot over medium heat.
- Cook the chorizo and onion for 5 minutes, stirring often.
- Add the garlic and potatoes, and cook for 2 minutes.
- Pour in the chicken stock and water, then simmer for 25 minutes.
- Stir in the kale and simmer for 8 minutes, until tender.
- Season with salt and pepper, then stir a few drops of vinegar into each bowl.
