- 2 tsp brown sugar
- 1 1/2 tsp mild paprika
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp chili powder
- 1/2 tsp cayenne pepper
- 1/4 tsp cracked pepper (optional)
- 2 large chicken breasts
- 1 1/2 tbsp canola oil
- 1/4 cup butter
- 4 cloves garlic
- 1/2 cup low sodium chicken stock
Steps
- Mix the brown sugar, paprika, oregano, salt, garlic powder, onion powder, chili powder, cayenne, and pepper in a small bowl.
- Slice the chicken breasts horizontally into four even pieces, then coat both sides with the spice mixture.
- Heat the oil in a 12-inch skillet over medium-high heat and cook the chicken for 4 minutes per side.
- Add the butter and garlic, then cook for 1 minute while spooning the melted butter over the chicken.
- Pour in the chicken stock, simmer for 4 minutes, and cook until the chicken reaches 165 F.
- Rest the chicken in the skillet for 2 minutes before serving.
