Ingredients
- 2 oz shiitake mushrooms
- 2 bundles bean thread noodles
- 2 tbsp oil
- 4 green onions
- 6 slices fresh ginger
- 1 cup carrots
- 1 cup bamboo shoots
- 1 cup fresh mushrooms
- 4 cup napa cabbage
- 8 heads baby bok choy
- 2 tbsp soy sauce
- 2 tsp sugar
- 1 cup rehydrating water from mushrooms
- 2 tsp sesame oil (optional)
Steps
- Pour 1 cup boiling water over the shiitake mushrooms and soak them for 10 minutes.
- Soak the bean thread noodles in hot water until tender, about 5 minutes, then drain.
- Heat the oil in a large wok over medium-high heat and stir-fry the ginger and green onions for 1 minute.
- Add the carrots, bamboo shoots, fresh mushrooms, napa cabbage, and bok choy, then stir-fry for 5 minutes.
- Add the noodles, shiitake mushrooms, soy sauce, sugar, and soaking water, then simmer for 5 minutes.
