- 1 cup very overripe mashed banana
- 1 cup natural salted peanut butter
- 2 large eggs
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/8 tsp nutmeg
- 3/4 tsp baking soda
- 1/4 tsp fine sea salt
- 1/3 cup chocolate chips (optional)
Steps
- Heat the oven to 350 F and grease an eight-inch square pan with oil.
- Whisk the banana, peanut butter, eggs, maple syrup, vanilla, cinnamon, nutmeg, baking soda, and salt in a bowl.
- Fold in the chocolate chips if using.
- Spread the batter evenly in the pan.
- Bake for 20 to 22 minutes, until the center is set and reaches 160 F.
- Cool the bars in the pan before cutting them.
