  • 2 fresh whole tilapia
  • 1/4 pint medium white wine
  • 1 1/2 cloves garlic
  • 4 tbsp freshly-chopped mixed herbs
  • 6 salad onions
  • salt
  • freshly-ground black pepper
  • 1/2 oz butter

  • 2 tbsp creme fraiche

Steps

  1. Heat the oven to 400 F and place the tilapia in a lightly oiled 9-by-13-inch baking dish.
  2. Season the fish inside and out with salt and pepper, then add the garlic, herbs, and salad onions.
  3. Pour the wine over the fish, dot with butter, and bake for 24 minutes.
  4. Check that the thickest part flakes easily or reaches 145 F, then transfer the fish to a plate.
  5. Pour the pan liquid into a small saucepan and bring it to a simmer over medium heat.
  6. Whisk the cornstarch with 2 tablespoons water, stir it into the pan liquid, and cook for 2 minutes.
  7. Stir in the creme fraiche and spoon the sauce over the baked fish.
