Ingredients
- 1 1/2 lb shrimp
- 2 tbsp extra virgin olive oil
- 2 cloves garlic
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- salt and pepper
- 3 potatoes
- 1/2 jalapeno
- feta and green onions for garnish (optional)
Steps
- Heat the oven to 425 F and place the pierced potatoes on a baking sheet.
- Bake the potatoes for 22 minutes, turning them once halfway through.
- Toss the shrimp with olive oil, garlic, lemon zest, lemon juice, jalapeño, salt, and pepper.
- Add the shrimp to the baking sheet and roast for 8 to 10 minutes, until opaque and cooked through.
- Split the potatoes and top them with the shrimp, feta, and green onions if using.
