Ingredients

1 1/2 cup uncooked farfalle pasta
1/2 cup chopped onion
2 tbsp olive oil
1 cup shredded cooked roast beef
1 cup chopped broccoli
salt and ground black pepper
1/2 cup grated parmesan cheese
1 tbsp green onions for garnishing (optional)

Steps

Boil salted water in a large pot, cook the farfalle for 10 to 12 minutes until tender, and drain it.
Heat the olive oil in a large skillet over medium heat and cook the onion for 4 minutes.
Add the broccoli and cook for 5 minutes until tender-crisp.
Stir in the roast beef and cook for 3 minutes until hot.
Add the drained pasta and Parmesan, toss until combined, and season with salt and pepper.
Cook for 2 minutes until the cheese melts, then add the green onions if using.
