Ingredients
- 1/2 cup butter
- 3/4 cup packed brown sugar
- 1/2 cup molasses
- 1 tsp vanilla extract
- 2 cups quick-cooking oats
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 3 tbsp whole milk
- 1/2 tsp vanilla extract
- 1 cup confectioners' sugar
Steps
- Heat the oven to 350 F and line two baking sheets.
- Beat the butter and brown sugar until creamy, then mix in the molasses and 1 teaspoon vanilla.
- Stir the oats, flour, baking soda, cinnamon, nutmeg, and salt together.
- Mix the dry ingredients into the butter mixture, drop spoonfuls onto the sheets, and bake for 10 to 12 minutes.
- Cool the cookies completely for about 10 minutes.
- Whisk the milk, confectioners' sugar, and remaining vanilla, then spread the icing over the cookies.
