Ingredients
- 1 tbsp butter
- 3 cloves garlic
- 1/4 cup minced fresh herbs - i used sage and thyme
- 2 1/2 sweet potatoes
- 2 1/2 russet potatoes
- 1 cup heavy whipping cream
- 1 1/2 tsp salt
- 2 cups shredded gruyère cheese
- 1/2 cup reduced sodium chicken broth
- 3 cups kettle brand chips
Steps
- Heat the oven to 375 F and butter a 9-by-13-inch baking dish.
- Melt the remaining butter in a small skillet, cook the garlic for 1 minute, and stir in the herbs.
- Slice the sweet potatoes and russet potatoes thinly, then layer them in the baking dish with the garlic herb butter.
- Whisk the cream, chicken broth, and salt together, pour the mixture over the potatoes, and bake for 45 minutes.
- Top the potatoes with Gruyère cheese and crushed kettle chips, then bake for 10 minutes more.
- Rest the dish for 10 minutes before serving.
