Ingredients
- 6 guajillo peppers
- 3 cups water
- 2 cloves garlic
- 1/2 cup chopped onion
- 1 lb pork carnitas
- 1 tsp knorr chicken or beef bouillon
- salt and pepper to taste (optional)
- 12 corn tortillas
Steps
- Remove the stems and seeds from the guajillo peppers, then simmer them with the water for 8 minutes.
- Blend the softened peppers, garlic, onion, and cooking water until smooth.
- Heat the sauce in a large skillet over medium heat for 5 minutes, then season it with bouillon, salt, and pepper.
- Stir in the pork carnitas and simmer for 10 minutes, until hot and at least 145 F.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds per side.
- Fill the tortillas with the saucy pork and serve hot.
