Ingredients
- 500 g potatoes
- 200 g plain flour
- 1 egg
- 1 tsp salt
- 250 g bryndza cheese
- 200 g bacon
- garnish chives (optional)
Steps
- Peel and finely grate the potatoes, then stir them with the flour, egg, and salt to make a thick dough.
- Bring a large pot of salted water to a boil while the dough rests for 5 minutes.
- Drop small pieces of dough into the boiling water and cook for 4 to 5 minutes after they float.
- Fry the bacon in a large skillet over medium heat for 8 minutes until crisp.
- Drain the dumplings, reserving 1/2 cup cooking water, then stir the dumplings with the bryndza and enough water to make a creamy coating.
- Top the dumplings with the bacon and its drippings, then add the chives if using.
